Nguyên liệu chuẩn bị
Thịt trâu (Chọn loại thịt nạc đùi, ít gân và mỡ khi luộc sẽ mềm thịt hơn)
Mỡ lợn
Húng lìu, dưa leo, cà chua (decor thêm)
Phèn chua
Gia vị
Cách tiến hành
Thịt trâu đên sát muối, húng lìu và gia vị
Trên mặt để 1 khúc mỡ lợn dài bằng 1 miếng thịt, dùng lạt tre buộc chặt rồi cho vào nước sôi trong 3 giờ
Muốn giòn ngon thêm thì cho 1 ít phèn chua vào nước
Khi lấy đũa đâm xuyên qua được là thịt chín, vớt ra để nguội
Dùng vật nặng đè ra cho hết nước. Khi ăn cắt khoanh để lên đĩa
