Chắc hẳn trong chúng ta ai cũng biết đến một số loại thịt như: thịt ba chỉ, thịt thăn, thịt dẻ sườn… nhưng đã bao giờ bạn tự hỏi những phần thịt ấy nằm chính xác ở chỗ nào của con TRÂU BÒ hay không? Những thịt phần thịt ấy có đặc điểm gì, nấu những món gì là ngon nhất?

Trong hình minh họa. Con trâu bò được chia ra làm phần thịt và những phần còn lại bị loại bỏ ( đầu, móng , đuôi ). Những phần thịt đó là: Nạc vai thịt nạm, thịt bắp, nạm gầu, thịt thăn, thịt mông. Trên thế giới có rất nhiều sơ đồ xẻ thịt khác nhau như: sơ đồ của Mỹ, Ấn Độ, UK, Brasil, Thổ Nhĩ Kỳ hay Argentina. Mỗi sơ đồ xẻ thịt gần như giống nhau về cách phân loại và được chia ra vì mỗi quốc gia có một loại TRÂU BÒ riêng ( Việt Nam cũng vậy ).
– Brisket: Thịt nạm ( thịt ức ) là phần thịt nằm ở ức con TRÂU BÒ, thịt này khá dai vì có gân. Mỗi con có khoảng 3-4kg thịt này. Thường dùng trong các món hầm, nấu.
– Chuck (blade): Thịt nạc vai là phần thịt nằm ở vai con TRÂU BÒ, khá nhiều mỡ. Thường sử dụng trong các món nấu,hầm, thi thoảng được dùng để nướng.
– Chuck tender: Thịt bắp cá lóc nằm ở phần vai, thuộc loại thịt ngon, mềm, ít mỡ, nhiều nạc. Có hình giống rủ cà rốt hay cá lóc. Có rất ít thịt này trên con mỗi TRÂU BÒ. Được các đầu bếp ưa thích xào, hầm, áp chảo…
– Rib: thịt sườn, bao gồm dẻ sườn, xương sườn, thịt nạm sườn. Thịt có lớp mỡ dắt xen kẽ, rất mềm và ngon. Được sử dụng nhiều nhất trong các món nướng.
– Plate: thịt nạm gầu, phần nhiều thịt ở vùng này gọi là nạm, nhiều mỡ gọi là thịt. Thịt này khá nhiều mỡ, thích hợp các món nấu và đặc biệt không thể thiếu trong món PHỞ
– Flank: thịt sườn bụng hay ba chỉ, chắc hẳn người đọc sẽ biết rõ loại thịt này nhất. Thịt có nửa nạc nửa mỡ, ăn rất ngon và mềm. Thường ăn trong các món luộc, nướng.
